Description
Proper sugar application is essential when preparing chimney cake dough for baking. Sugar should be applied only to the dough—not to the surface of the cooking roll.
Why correct sugar application matters:
- Excess sugar falls off during baking, causing smoke and an unpleasant burnt smell.
- Rolling dough into sugar instead of using the sugar blade forces too much sugar into the dough. As the dough expands, this sugar gets pushed out, resulting in uneven caramelization and a messy baking machine.
- Rolling dough into sugar also contaminates the sugar with oil and dough residue, making it wet and clumpy. Once the sugar sticks together, it becomes unusable and must be discarded.
- Sugar on the cooking roll melts and burns during baking. This leads to difficult cleanup and can damage the roll’s surface when scraping off the burnt residue.
- Sugar on the end pin—caused by dipping it into the sugar container—can melt into the motor during baking, potentially causing serious damage or malfunction.
Applying sugar properly ensures even baking, protects equipment, and reduces cleanup time.
The stainless-steel sugar blade is specially designed for easy, even sugar application. It scoops sugar from the container and, as the cooking roll rotates, evenly coats the dough.
Additionally, the sugar blade is a versatile tool that can be used to cut and portion dough, as well as to scrape dough off the work surface.

- Our equipment is built in Europe to a high standard & our oven’s & grills are made for commercial use & are hard-wearing.
- Electric heating elements are consumable parts & have a life span of around 2500 – 3000 hours. Some customers keep a couple of spare electrical heating elements for their baking machines at their location as spare parts.
- Finally, if you take care of your baking machine, it should last. Common user errors which can damage the baking machines are:
– Removing the cooking rolls incorrectly & damaging the motors (ask for link to video showing how to remove correctly).
– Setting the target temperature too high (over what we recommend) on the Electric machines & then leaving the appliance empty, causing the heating element(s) to burn out prematurely.
– Applying far too much sugar and / or oil to the Kurtos dough resulting in excess ingredients falling down during baking.
– Not cleaning the baking machine properly, allowing a build-up of burnt sugar / ingredients.
